Divide the exhaust into equal parts and roll into balls, then let rest for 15 minutes.

Deflate the rested dough again, roll it into a round shape, and put it into the baking pan for final fermentation.

When the dough has doubled in size, pipe puff pastry batter out of the center of the dough.
