Choose a section of fresh lotus root and wash it.

Peel and cut into medium-thick slices.

Soak the sliced lotus roots in water.

Prepare seasonings, Sichuan peppercorns, dried chili peppers, cashew nuts and peanuts.

Put the seasoning into a food bag and crush it with a rolling pin. (Crush the bag slowly and carefully to break it)

Peel and mince a piece of ginger and add a small amount of cold water to make ginger juice.

Take an empty bowl and add two spoons of dried chili powder and half a spoon of salt.

Put the ground Sichuan peppercorns, dried chili peppers, cashews, and peanuts into a small bowl of dried chili noodles.

Heat the oil in the pot. The oil temperature should not be too hot. Turn off the heat and let it cool for about half a minute. Then pour it into a bowl. (Too hot will burn the chili peppers)

Blanch the soaked lotus leaves until they are raw, add vinegar, salt (less spicy oil contains salt), ginger juice, and sugar while it's still hot, and mix it while it's hot.
