Remove the hard shell of the shrimp heads, keeping the part of the shrimp heads that contains the shrimp oil and shrimp meat. Then remove the hard skin on the shrimp bodies, keeping the tails and the shell connecting them to the shrimp tails. (Because it is difficult to remove the shells from the tails of shrimps, it is easier to retain the shells when frying)

Cut open the shrimp from the back to the tail, cut it deeper but do not cut it, remove the shrimp line, and pat the shrimp flat on the chopping board with a knife.

After sorting the shrimps, wash them with clean water, drain them, add seasoning salt, sugar, cooking wine, minced garlic, and minced ginger, mix well, and marinate for 20 minutes.
