Spread an egg and set aside (no salt added), prepare onion and ginger water, blanch carrots and fungus, and slice cucumbers for later use.

Heat oil in a pan and add cucumber slices one by one. Fry carrot slices, fungus, and eggs for 1 minute.

Add salt, light soy sauce, chicken essence, green onion and ginger water, stir-fry for a while, then add water starch to thicken.

Remove from pan and serve.
