Delicious fish head and winter melon soup
Overview
When there were fish heads but no tofu, I created this dish. The soup made by stewing winter melon and fish heads is very delicious

Add boiling water (note it is boiling water) to the soup pot with a small amount of onion, ginger and garlic

Add a small amount of oil to the wok, heat it up, add sliced ginger and chopped garlic, fry the fish head until golden brown on both sides

Put the fish head into the soup pot and simmer over high heat (I didn’t add water directly to the fish frying pot here because I want less oil)

Cook until the soup turns white, about 15 minutes, add winter melon and enoki mushrooms

Then add salt, chicken essence, and pepper and cook for 6 minutes.

Add 2 drops of sesame oil and add some coriander
