Overview

I have been wanting to make this swan cake for a long time, and finally made up my mind to put my fear behind me and make this swan cake that I particularly like. This swan puff pastry is relatively complicated and requires stacking, shaping, and baking. The main thing is that you need to be patient when folding the pastry, and be sure not to break it.

  1. Prepare the ingredients for watery and oily skin.

  2. Mix all ingredients and add softened butter.

  3. Mix and knead with your hands until it resembles bread crumbs.

  4. Use about 110ml of water, slowly add it, knead it into a dough, and let it rest for 30 minutes.

  5. Wrap in 180 grams of butter, roll into a rectangle, and place in the refrigerator to chill. Spare.

  6. Take out the relaxed dough, add some dry flour, and roll it into a thin and even rectangular sheet.

  8. Wrap the butter from left to right first, then expel the air inside, and press the surrounding area completely. Roll out into a more regular rectangle.

  12. While waiting for the puff pastry to fold, make the swan’s neck. This is using baked cookie dough to make the swan's neck. Bake at 170 degrees for 10 minutes.

  21. Place in baking pan. Preheat 180°, upper and lower heat, middle layer, 20 minutes.
