Partridge stewed with cordyceps
Overview
The first recorded use of Cordyceps sinensis was in Wu Yiluo's "Ben Cao Cong Xin" in the Qing Dynasty. The book believed that Cordyceps sinensis is sweet and warm in nature and flavor. Functions: Nourish lungs and kidneys, resolve phlegm and relieve cough. It can be used for chronic cough, deficiency and asthma, postpartum weakness, impotence, coldness and other deficiencies. According to research: Cordyceps sinensis mainly contains components such as cordycepin, cordycepic acid, adenosine and polysaccharides; cordycepin can inhibit the growth of streptococci, Bacillus mallei and anthrax and other pathogens, and is an anti-cancer active substance, which has a good regulatory effect on the human body's endocrine system and nervous system; cordycepic acid can change the human body's microcirculation, and has obvious effects of lowering blood lipids, antitussive and expectorant; cordyceps polysaccharide is an immune modulator, which can enhance the body's resistance to viruses and parasites. Today I am using two small stew pots, each with different medicinal materials. One cup is for children to drink. It has the effect of strengthening the spleen, replenishing deficiency, and strengthening the body. The other cup is for women to drink. It is used to replenish deficiency after illness, low back pain, weakness, tinnitus and forgetfulness.

First, put water in the electric stew pot and plug it in to heat. Then boil water and set aside. Start preparing the ingredients: I usually buy partridges that have been slaughtered at the market. After returning home, wash it clean, cut it into two sides along the belly, take out the internal organs and blood clots and discard them, and peel the skin all over the body (this treatment is mainly to make the soup light and not greasy). Then scald the treated partridge with hot water and filter out the blood. Cut the lean pork into squares of about two centimeters (mainly for seasoning the soup). You only need to prepare two small pieces for this. Eucommia ulmoides (break into small pieces about 2 cm long), Cordyceps sinensis, wolfberry, Sichuan bark, longan, and red dates. Wash them all with water.

Put different medicinal materials into the two cups (1) For women's consumption: add one partridge, 7 cordyceps, 5 grams of Sichuan bark, and 10 grams of Eucommia ulmoides. (2) For children: add one partridge, 7 cordyceps, 2 red dates and 2 longans. Pour in 80% boiling water, close the lid, put it into the electric stew pot and simmer for 1.5 hours. In the last five minutes, open the stew pot and add 10 wolfberries into each of the two pots.
