Dry roasted medium yellow croaker
Overview
I bought a medium-sized yellow croaker for my daughter. It was supposed to be steamed. As a result, I burned it with chili pepper, but the little guy still ate half of it.

Clean the fish and make a few cuts on the fish to add flavor. Add salt, ginger and cooking wine and marinate for ten minutes.

Cut all onions, ginger, and garlic into shreds and set aside. I used green onions, I forgot the picture above

Put oil in the pot, add a spoonful of bean paste and stir-fry ginger, garlic and chili until fragrant.

Add a spoonful of light soy sauce and cooking wine, then add half a bowl of water and bring to a boil

Put the fish in it. Use a spatula to continuously pour the sugar sauce onto the fish. Turn over carefully.

Sprinkle some chopped green onion, cover and simmer for a few minutes. Turn off the heat. Don’t rush to plate. Simmer for three to five minutes before removing from the pan.
