Homemade fish head stew

I have been cooking for almost six years and this is my first time trying fish stew🐠! I also searched online, consulted some friends privately, and combined my own cooking methods. Today’s fish head stew was a success! Now I can share my method with everyone and learn from it!

Prepare the raw materials, onions, ginger, garlic and coriander!

Wash the pork belly and cut it into pieces. I didn’t buy pork belly today and he wouldn’t cut it into small pieces! My family doesn’t like meat very much, so I almost throw it away after stewing it, just to use it to taste it. Today, all the fish and meat are gone, and really only the meat is left! Meat is not very popular in my house, haha😊

① Wash and dry the fish head. This step should be done first. I forgot to take a picture. This step is already to put a little more oil in the pot and fry the fish head in it! Pay attention to turn over! Please wear an apron and gloves during this step, and be careful and safe, as the oil stains can sometimes be huge! Don't get burned!

Fry and put on a plate and set aside!

Add some soybean oil directly to the oil pan used for frying fish, add onions, ginger and garlic, add boiled meat and stir-fry, stir-fry over low heat, add light soy sauce and stir-fry evenly. There is much more light soy sauce here than usual!

The sauce is spicy and fragrant. This sauce is recognized by many as a good helper for fish stew! The chefs in rural areas use it to cook fish. I tried it today and it was really good! I added a little more than one-third and added sugar. I added four teaspoons of salt to the sugar. I tasted it later and added two more tablespoons! Make the soup according to your personal taste and try again! Stir well!

Put the fish head into the soup pot and it's ready to stew! When there is not much sugar left in the soup pot and it becomes thick, taste it again and adjust the salt!

Turn off the heat and add some coriander! I think coriander is just for decoration😁

I don’t cook fish much at home, and the plate was so weak that I didn’t take any beautiful pictures! The longer you cook the meat and stir-fry it, the more oil will come out and the meat will be more fragrant! I didn't add any wine or cooking wine. I smashed the garlic and added a little more. There was no fishy smell and it tasted pretty good! I feel that the use of onions, ginger and garlic is very important when cooking!
