Braised noodles with bacon and bamboo shoots

Do you have to use beans for braised noodles? For this northern style pasta, why don’t you try southern ingredients? When the cook saw a small piece of bacon at home, a pot of braised war between the north and the south began. The bamboo shoots on sale in supermarkets tacitly contribute to the special flavor of this braised noodles. As for green vegetables, they need to have matching flavors, bright colors, and not easily become wilted or darkened when exposed to heat. Then there are green and red peppers. Facts have proved that this choice is correct, and there is even a little surprise. The peppers have just the right spiciness.

There are four main side dishes. Bamboo shoots are also called winter bamboo shoots and magnolia slices

Blanch bamboo shoot slices

Bacon slices

Chop onion, ginger and garlic and set aside

Shred green and red peppers

Steam the cut surface for 5 or 6 minutes.

Put oil in the pot, simmer the onion, ginger and garlic, add bacon and stir-fry

Add cooking wine and bamboo shoots

Add water and simmer for a few minutes

Then add the cut noodles and a little salt, continue to simmer for 5 or 6 minutes

Add dark soy sauce, turn the noodles and vegetables up and down and simmer for 2 or 3 minutes

Before serving, add shredded green and red peppers. If the color of the sauce is not enough, add some dark soy sauce and stir-fry a few times

I have made this braised noodles twice. The first time I added less soy sauce and the color was a bit lacking. The second time I added more, and the green garnish was replaced with garlic sprouts.

Blanch the garlic moss with water first, and finally put it together with the red pepper. The color and taste are even better.
