Make the medium-sized dough one night in advance. Mix all the medium-sized dough ingredients and knead the dough in a bread machine for 20 minutes.

Knead the dough evenly and make it smooth on the surface. No need to peel off the dough. Put it in a strong plastic bag, drain out the air inside, seal it, leave it at room temperature for half an hour and then refrigerate it in the refrigerator overnight.

Prepare all the ingredients for the main dough

Except for the butter, put the other ingredients together with the medium-sized dough in the bread machine and knead for 20 minutes. After setting the bread machine to a program, let the dough rest for 10 minutes, then add butter and knead until it is complete, and knead it into a beautiful glove film.

Shape the dough into a ball, put it into a container, wrap it in plastic wrap, and let it rest at room temperature for about 30 minutes. The temperature is high in summer, and it is 30 degrees here every day. We adjust it based on the local room temperature.

Once the dough has doubled in size, dip your fingers in flour and poke small holes in the dough without shrinking.

Press and deflate the dough

Cut the dough into 3 equal parts, roll into a round ball, cover with plastic wrap and let rest for 10 minutes

Roll out the dough into a tongue shape and roll it up from bottom to top

After rolling out the dough, wrap it in plastic wrap and let it rest for 10 minutes

Roll out the dough again, open the bottom a little, roll it up from top to bottom, pinch the bottom tightly, and put it in the toast mold

The rolled roll should preferably be 2.5 circles

Put the dough into the oven for the second rise. The temperature is now high and the fermentation function is not turned on. Just put a cup of hot water in the oven and start the second rise directly. Just change the hot water 3 times in the middle.

After about 50 minutes, the dough will rise to 8 minutes full.

Preheat the oven to 165 degrees, bake for 35 minutes, remove from the oven and place on a baking sheet to cool.
