Overview
The origin of the recipe is mainly because eating charcoal grilling is not good for your health, and you are craving for mutton skewers, so you bought a household electric grilling equipment to start grilling to satisfy your craving. I started to search for some old Beijing electric grill recipes, and marinated them according to the method (added many ingredients, such as tomatoes and onions) and then grilled them. However, the aroma of the mutton was lost when grilled. Later, I found a Baidu answer on the Internet. Grilled mutton skewers do not need any processing to have the real taste. So I continued to refer to the online method and experiment, added some basic seasonings, and it tasted good after baking. I wrote it here mainly for my own records. Cut the meat into small pieces, or ask the butcher to cut it. Mine is a bit thin, so I should match the fat with the leanness, so that the meat will not be burnt and will have the aroma of fat when grilled

Start adding the auxiliary ingredients, 1 spoon of sesame seeds, 2 spoons of cumin powder, 2-3 small spoons of salt, 1 spoon of starch, 2 spoons of oil, and 2 spoons of cumin seeds. After spreading, spread it evenly with your hands, then seal it with plastic wrap and put it in the refrigerator for 10-20 minutes to taste.

Skew the meat, mix the fat and lean meat, first skewer a piece of fat, then a piece of lean meat... so that the skewers are full (the fat will drip down when grilled on top, which will increase the flavor and not dry out the meat).

Pour water at the bottom of the oven (for easy cleaning later, and increase the moisture to prevent the meat from drying out). Preheat for 5 minutes, then hang the meat skewers and start grilling. Bake for 10 minutes, flipping once every 3 minutes, then flipping for 2 minutes, turn off the heat and simmer for 2 minutes, flipping every minute
