Ji Po Bamboo Shoots is the Hunan name for small fresh bamboo shoots as thick as a finger. You can only eat it in spring, it’s so delicious! Mixing bamboo shoots with sauerkraut and minced meat is super delicious!

Heat the pan until red without adding any oil, stir-fry the chicken and bamboo shoots until dry and remove the moisture. Set aside.

When the water comes to a boil, add the chicken and bamboo shoots to the boiling water. Take them out and soak them in cold water.

Stir-fry the fatty meat into the meat filling.

Add dark soy sauce and add red pepper and garlic.

Add the chicken and bamboo shoots and stir-fry over high heat. Add appropriate amount of salt and mix well.
