Ask the fish seller to help you handle the fresh catfish. When you get home, use a knife to scrape the mucus, wash the fish, and divide the fish into two halves from the abdomen along the direction of the fish bones. Do not cut off the back of the fish. Spread sauce on the body and belly of the fish. I used Orleans grilled chicken seasoning and chili sauce (chili sauce is fried with peanuts and chili peppers, with a little sesame seeds sprinkled in). Marinate with green onions, ginger, cooking wine, salt, sugar, and allspice.

Wrap the baking tray with tin foil. Be sure to wrap it. Don't be lazy and just lay it on. Otherwise, the soup will still flow into the baking tray, making it inconvenient to clean.

Place onion and ginger under the fish belly, brush the fish body with oil (I also put some butter under the fish belly), preheat the oven to 200 degrees and bake for 15 minutes (the baking time and temperature should be adjusted according to the temperament of your oven and the size of the fish).

While the fish is grilling, process the ingredients. I chose potatoes, onions, pumpkins, and lotus root slices (you can also choose vegetables according to your preference). Cut the above ingredients into cubes and set aside.

Put oil in the pot, sauté the onions, ginger, and garlic. First put the potatoes, then the pumpkin, lotus root slices, and finally the onions. Add salt, sugar, five-spice powder, and chili oil, stir-fry, then add water and simmer for a while (it would be better if you add stock). If you are particularly spicy, you can add a few chili peppers and stew them together for a while.

Bake the catfish until it is about 70% cooked, take it out, add the ingredients, put the soup in the pot together, sprinkle some chili sauce on the fish, add a few cloves of garlic (I personally prefer garlic, if you don't like it, you can leave it out), bake it in the oven at 150 degrees for 10 minutes (this time and temperature depend on the first time you bake the fish, this time you need to bake it until it is fully cooked).
