Eggplant slices (you don’t need to peel tender eggplants)

Score the eggplant slices (double-sided)

Spread a little salt on each slice

After peeling the shrimp, remove the shrimp thread from the middle

Onion, rice, garlic (about a head of garlic), shrimp, set aside

Heat a pan with cold oil until 50% of the oil is hot, then fry the eggplant over medium heat.

Drain the oil and set aside

Put the oil back into the pot, heat it 50%, add the chopped green onions and half of the minced garlic and stir-fry

Stir-fry until fragrant, add shrimp and stir-fry

After the shrimps are fried, add the eggplant and stir-fry. Add dark soy sauce, salt, white sugar and cooking wine, stir-fry evenly and serve

Finally, sprinkle the remaining minced garlic and try the salty roasted eggplant
