Take a piece of white tofu and cut it into evenly sized pieces. Set aside.

Pour more oil into the pot, heat it until it is very hot, and pour in the cubed tofu. Keep frying over medium heat, and then flip gently with a spatula to allow the tofu to heat evenly.

Fry until the tofu hardens and turns golden, then remove and set aside.

Pour up the oil and use the remaining oil in the pot to stir-fry the marinated lean pork shreds (forget about the picture of the lean pork shreds).

Stir-fry until the shredded pork is cooked, pour in the fried tofu, add the thin gravy prepared in advance with oyster sauce, cornstarch, salt, chicken powder, and water, and stir-fry gently evenly. Be careful not to break the tofu when stir-frying. Cover and simmer for 1 or 2 minutes to make the tofu more flavorful.

Add the chives and stir-fry gently, reduce the juice over high heat, and serve on a plate.
