Clean the chicken, remove the head and tail, and then evenly apply a thin layer of salt and ginger powder on the inside and outside of the chicken. Place the chicken on a plate lined with ginger slices (the plate should be slightly deeper to prevent the chicken juice from overflowing during steaming)

After the water in the pot is boiled, add the chicken

Cover the pot and steam over medium high heat until the chicken is cooked through

Take a chopstick and insert it into the thicker part of the chicken. It will be done when it can be inserted easily and there is no blood (about 15 minutes, depending on the size of the chicken)

While steaming the chicken, you can prepare the shallots. Clean and chop the shallots

Heat a spoonful of oil in the pan, turn off the heat, and use the remaining heat to sauté the shallots until fragrant

Add a small spoonful of sugar

Add 1 tablespoon steamed fish soy sauce

Pour in the steamed chicken juice and mix well

After cutting the chicken into pieces, pour the shallot sauce on top of the chicken
