Using only an additive like baking powder, you can make delicious fried dough sticks that are crispy on the outside and tender on the inside. The recipe used is Dongying Xiaoyingzi’s recipe, with slight modifications.

Raw materials are ready.

Put the liquid part of eggs, 20 grams of milk, and about 265 grams of water into the bread machine first, then add the solid part of salt, flour, and baking powder. The dough mixing process lasts 20 minutes. If you don’t use a bread machine, you can mix it by hand. The flour should be slightly softer than the dumpling noodles.

Add 50 grams of softened butter and start a dough kneading program for another 20 minutes.

Put the mixed noodles into an airtight box or wrap it in plastic wrap and put it in the refrigerator overnight.

The next morning, take it out and divide it into 4 pieces. Roll one piece into a strip 40 cm long and 2-3 cm thick.

Roll out all dough into 4 strips.

Flatten the dough and roll it into a 6 cm wide strip. Don't roll it out too thick, otherwise it won't explode easily.

Stack the two pieces together and press the middle with chopsticks.

The oil pan is about 180 degrees. If you put a small dough in the pan and it floats immediately, it means it is ready. Peanut oil and soybean oil are commonly used oils for frying because these two oils have higher melting points.

Pinch both ends of the dough, twist it slightly, put it into the pot, flip it with chopsticks, and fry over medium heat. My pot is 32cm.

Remove when both sides are golden brown.
