Hot and sour potato shreds
Overview
The weather has been hot recently, and the dishes I cook are relatively light. The spicy and sour potato shreds are really appetizing and refreshing.

Wash the potatoes, peel them, cut them into thin strips, and soak them in water (it’s best to soak them for a while) to remove the starch inside.

Drain the shredded potatoes and set aside.

Chop onion and garlic into mince and set aside.

Heat the oil in a pan, add the red pepper and stir-fry the chopped green onion until fragrant.

Pour in the shredded potatoes, add white vinegar, salt and soy sauce and stir-fry quickly.

Add minced garlic to enhance the flavor and turn off the heat.

Remove from pan and plate.
