  1. Wash the potatoes, peel them, cut them into thin strips, and soak them in water (it’s best to soak them for a while) to remove the starch inside.

  2. Drain the shredded potatoes and set aside.

  3. Chop onion and garlic into mince and set aside.

  4. Heat the oil in a pan, add the red pepper and stir-fry the chopped green onion until fragrant.

  5. Pour in the shredded potatoes, add white vinegar, salt and soy sauce and stir-fry quickly.

  6. Add minced garlic to enhance the flavor and turn off the heat.
