Overview
Once, I ordered eggplant in oil for dinner with a friend, and I was particularly impressed because it not only looked good, but was also delicious. Prepare eggplant, red pepper, garlic cloves, and green onions.

Cut the eggplant in half.

Slice thinly but keep the slices from falling apart.

Soak the cut eggplants in water, then cut the peppers, garlic cloves (be careful to mince them), and green onions and set aside.

Pour oil into the pan, heat it up, add eggplant and fry over medium heat for about six minutes.

After frying, serve on a plate.

Pour out the excess oil, add the chopped chili garlic cloves, stir-fry for one minute, add salt, stir-fry for another two minutes, add dark soy sauce, stir-fry for one minute, add chicken essence, and stir-fry for one minute.
