Blanch shredded carrots and bamboo shoots in cold water and set aside. Then add soy sauce, mature vinegar, sugar, cornstarch, and a little salt to the water and mix well to prepare the sauce. (Also marinate the lean pork shreds with a little cooking wine, salt and cornstarch for preparation)
