Peel the lotus root, cut into thin slices, and soak in water.

Remove the garlic cloves and chop into small pieces

Remove seeds from yellow pepper and cut into strips

Pour appropriate amount of oil into the pot and sauté garlic until fragrant

Add shredded yellow pepper and stir-fry

Drain the lotus root slices, add in and stir-fry

Add salt and sugar and continue to stir-fry

Stir-fry until the lotus root slices change color, then pour in appropriate amount of mature vinegar according to personal taste.
