Curry vegetable pancake
Overview
My grandma brought too much curry from Singapore. I couldn't finish it, so I suddenly thought of making a curry vegetable pancake. It has good MSG and has a Southeast Asian flavor.

Take two eggs and beat them.

Put all kinds of diced vegetables (diced carrots, diced corn, diced green beans) into the pot and cook. I bought ready-made frozen diced vegetables in the supermarket. If not, you can also add in seasonal vegetables according to your own preferences, including green leafy vegetables. Put the flour into a basin, pour in the egg liquid, chopped green onions, diced vegetables, add a little salt, add some curry powder, and mix until it becomes a thin paste.

Brush the electric pan with a little oil, put a tablespoon of batter into the pan, and fry into small pancakes.
