Chop duck meat into small pieces and wash. I only used 1/3 of a whole duck. A whole duck was too much and I couldn't finish it.

Put water in a pot, bring to a boil, add duck meat, blanch

Wash the duck meat and drain

Bianjian should be soaked half a day in advance

Wash the flat tips, cut them into small sections, and remove the older roots. Prepare ginger slices and ham slices

Pour water into the soup pot. When the water boils, add duck meat, flat tip, ginger slices and ham slices. After the fire boils, turn to medium-low heat, cover the pot and simmer the soup.

Wash and cut winter melon into pieces

After the soup has simmered for 40 minutes, add the winter melon, cover the pot and continue cooking. Test the saltiness of the soup and add appropriate amount of salt. Because of the flat tips and ham, the soup itself will be salty, so you shouldn't need to add a lot of salt.

After 20 minutes, add the wolfberry, cook over high heat for 5 minutes, then turn off the heat. The old duck soup comes out of the pot and is very delicious~
