Prepare the ingredients

Cut a small slit in the four corners of the lactone tofu so you can easily remove it from the box and place it upside down on a plate

Remove the egg whites from the salted duck eggs and leave the yellow, chop the scallions into small pieces, cut the tofu into small pieces with a knife and set aside (the egg yolks are a bit scattered, but it doesn’t matter, you still need to crush them when frying) 1 teaspoon of starch, add 2 teaspoons of water, mix well and set aside

Heat oil in a pot, pour in egg yolks, and crush them with a spatula until there are no particles

After you see the egg yolk foaming, add tofu and half a bowl of water and bring to a boil, stirring briefly (tofu can be eaten raw, so don’t cook it for too long as it will age easily)

Finally, add a little salt, chicken essence and mix thoroughly, thicken with starch water and bring to a boil
