Wash and devein the shrimp, prepare Pixian watercress, millet, pepper, onion, ginger and garlic

Heat the oil in a pan until it is 50% hot. Add the shrimps to the pan and fry over medium-low heat

Flip and fry the other side

Fry the shrimp until just cooked and transfer to a plate

Add oil to the original pot, shrimps, millet, pepper, Pixian watercress, onion, ginger and garlic and stir-fry until fragrant

Add the fried shrimp

Pour cooking wine into light soy sauce

Add salt, sugar and a small amount of water and stir-fry over low heat for two minutes

Remove from pan and plate
