Kill and wash the fresh crucian carp, marinate with cooking wine, shredded ginger, chopped green onion and salt and store in the refrigerator

Chop green onion leaves

Boxed tofu, this is what I use, block soft tofu will also work

Tear off the film on the box

Carefully turn the box over and place it on the cutting board. Make a small opening at the bottom of the box

Pinch open the small opening of the box to allow air to enter the box, and the tofu will come out in one piece

Cut the tofu into cubes and shape into your own shape

Put the pan on the fire and add vegetable oil

Once fried, turn over

Fry until both sides are golden brown, add water to a wok and bring to a boil over high heat

The color of the soup will turn white in about 7 or 8 minutes

Add appropriate amount of salt

Add tofu cubes

Continue to cook over high heat

When the soup is creamy and white, reduce heat to low and sprinkle in the green onions
