Braised fish head tofu
Overview
Drain the fish head and cut the tofu into cubes and set aside. Heat the pan with cold oil and add the pork belly first, then add the fish head and fry it inside and out. Add ginger cubes, garlic, scallion knots, dried red peppers, star anise, and onions in turn and stir-fry continuously. Pour in rice wine and beer, add plenty of hot water, add oyster sauce, light soy sauce, dark soy sauce, and brown sugar. Add the tofu and cook for 30 to 50 minutes. Remove the ginger cubes, collect the juice, and add chopped green onion to a plate.

The fish head I chose to kill was very fresh.

Silky tofu. Silky tofu absorbs flavor faster when grilled.

Slice pork belly and set aside.

The condiments are as shown in the picture. Decide your own taste.

After the pork belly is fried in the pan, put the fish head in and fry both the inside and the outside.

After adding the beer, add more water and simmer slowly.

Simmer over low heat for 30-50 minutes.

When taking out the pot, remove the ginger and green onions.
