Ingredients
Steps
-
Mix 100g flour, 100g water and 1g yeast evenly and ferment until it falls back to the state of old noodles;
-
Mix the noodles, other ingredients except butter and fillings. The yeast can be mixed with the remaining water in advance and then added to the powder mixture;
-
Use a spatula to mix the ingredients in 2 until it basically forms a ball;
-
Transfer to a silicone mat or chopping board, knead until smooth, add butter, and continue kneading until it expands, that is, a thicker film can be pulled out;
-
Put the dough into a container, cover it with plastic wrap, and place it in a warm place for basic fermentation;
-
After about 1 hour, the dough will rise to double its original volume. Dip your fingers into dry flour and make sure the hole does not shrink or collapse. The basic fermentation is complete;
-
While waiting for fermentation, beat the cream cheese until smooth, add jam and mix well, cover with plastic wrap and set aside;
-
After the basic fermentation is completed, take out the dough and deflate it;
-
Divide into small balls of even size according to your preference, roll into balls, cover with plastic wrap, and rest for 20 minutes;
-
Take a small, relaxed dough, roll it out into a rectangle, spread the filling in the middle, and then put blueberries on it. Be careful not to roll the dough too thin;
-
Roll up the dough and pinch it tightly;
-
With the seam downwards, place it on a baking sheet lined with greaseproof paper and place it in a warm and humid place for secondary fermentation;
-
After the second fermentation is completed, brush a layer of honey water (or water) on the surface of the dough, and then sprinkle some oatmeal, sesame seeds, etc. as decoration (or not sprinkle it);
-
Preheat the oven to 180 degrees in advance. After preheating, put the baking sheet into the oven, heat the middle layer to 175 degrees, and bake for about 20 minutes (adjust according to the size of the dough). After baking, take it out of the oven immediately, transfer to a drying net, cool to room temperature without scalding your hands, and store in a sealed container.
