Half a local chicken, a small amount of pork ribs (local chicken is thinner, adding some pork ribs will make it more delicious), wash in small pieces and set aside

Soak the mushrooms in water in advance. I used flower mushrooms and Hericium erinaceus

Set aside onions, ginger and garlic, cut into small and large sections

Prepare pepper, aniseed, cinnamon, etc.

Boil water and blanch the chicken and ribs and drain them

Heat oil in a pot, add onion, ginger, garlic, star anise, etc. and saute until fragrant

Add chicken and stir-fry, then add a little sugar to taste

Add soy sauce

Add a little cooking wine

Stir-fry for a while, put it in a casserole and add water. When the soup is about to boil, skim off the floating residue.

Add the soaked mushrooms into the pot

Add large pieces of onion, ginger, and garlic, bring to a boil over high heat, then turn to low heat and simmer for 40-50 minutes. Do not add salt first

Cover the pot and simmer until it is 7-8 minutes thick. Add salt and continue to simmer for another 10 minutes.
