Overview
Hebei Tofu---a very popular soup dish here in Handan, Hebei Province. People here like spicy food and numbness, but they also like this dish very much. It is fresh and fragrant. After eating dishes with strong flavors, Hebei Tofu is light and tasty. It is a good choice for soup dishes. I still thought, I just learned to take care of and serve dishes, so I would choose such a non-brightly colored soup, right? But in order to give everyone the opportunity to try one of our special dishes, I took the risk and tried it. There is no reference, it is completely made by myself, so it may not necessarily meet everyone's taste. I also hope that friends who also like this dish can discuss it together.

Seasonings: starch, pepper, cooking wine, salt

Marinate the shrimps with cooking wine, slice the sea cucumbers, and cut the squid with a flower knife

Mince ginger and garlic (you can add more ginger)

Blanch the tofu to remove the beany smell and slice it

Shrimps, sea cucumbers and squids fly into the water one after another

Put a little oil in the pot (a little is enough)

After the oil is hot, add the shrimp, minced ginger and garlic and sauté until fragrant

Pour in the stock (I used water). I don’t have stock at home, but I think it’s the same with water

Pour in sea cucumbers and squid flying through the water

Mix the flour into water, remember there should be no lumps, otherwise

Add salt and blanched tofu, bring to a boil over high heat, and turn off the heat

After putting it into the container, add a little pepper and coriander and it’s OK!
