Black rice burger (refrigerated medium)
Overview
After my son moved to school, he was only at home for more than one day a week. The increasingly heavy schoolwork and the increasingly sensitive age made him very emotional. He asked him what kind of bread he wanted to eat and ordered burgers, so the mother must be satisfied! This is a soft burger made with the Chinese method. Black rice is added to the ingredients, which not only gives it a lavender color but also increases nutrition. Then use your imagination and put in all kinds of fillings you like and enjoy it deliciously! (medium type): 175g high flour, 105g water, 3g yeast (main dough): 40g black rice flour, 35g high flour, 35g water, 15g fine sugar, 38g salt, 3g milk powder, 15g eggs, 30g butter, 25g (stuffing): egg, cheese, bacon, cucumber, Thousand Island dressing, ketchup

Steps
-
The ingredients for the medium-sized dough are mixed into the dough, and the yeast can be dissolved in warm water before use. Put it in a plastic bag and let it sit at room temperature until it becomes noticeably bigger, then put it in the refrigerator for about 17 hours.
-
Take out the refrigerated medium seeds and tear them into small pieces, and add other ingredients to the main dough except butter.
-
Knead the dough in a bread machine until it can pull out a thicker film.
-
Add butter and continue kneading.
-
Knead until you can pull out a thin and unbreakable membrane. Cover with a damp cloth and let rise until 2-2.5 times in size.
-
Take out the dough and tap it gently to make big bubbles.
-
Divide into 9 portions, roll into balls, cover with plastic wrap and let rest for 15 minutes, press gently again to deflate and form into balls. (I was lazy and didn’t relax and just rounded the second round)
-
At the fermentation stage of the oven, put a bowl of hot water in the oven and let it rise until it is 1.5-2 times in size.
-
Brush a layer of egg wash on the surface and use a rolling pin to stick sesame seeds in the middle.
-
Preheat the oven in advance and put it in the middle rack of the oven at 180 degrees for about 18 minutes.
-
Very soft burger bun.
-
Cook the hard-boiled eggs in advance.
-
Fry the bacon.
-
Next, make the burgers. Cut the embryo into two, place a piece of cheese in the middle, and bake at 180 degrees for 2-3 minutes.
-
Spread some Thousand Island dressing on the cheese, put the eggs and then spread some Thousand Island dressing.
-
Top with bacon.
-
Add the cucumber, squeeze on some ketchup and Thousand Island dressing, close the other half and eat.
