Spicy crayfish
Overview
My husband said that eating lobster at home is the best way to enjoy it. It’s true that you can buy it and cook it yourself. It’s cheap, and it’s definitely cleaner than what’s made outside, and the taste is not bad!

Cut off the claws and intestines of the lobster, wash and set aside;

Put oil in the pot, when the oil is hot, turn to low heat, add peppercorns, onions, ginger, garlic, chili peppers, and bay leaves and stir-fry until fragrant, then add bean paste;

Turn to high heat, pour in the washed lobster, stir-fry until it changes color, pour in cooking wine, steamed fish soy sauce, and a little oil;

Pour in hot water to almost cover the lobster, add a small piece of rock sugar and a little salt (don’t put too much salt, the bean paste, steamed fish soy sauce and oil used before are all salty);

After the water boils, turn to low heat and simmer for 10 minutes. Turn to high heat and add two slices of green and red pepper to reduce the soup (don’t let the soup completely dry up, leave a little for more flavor);

Sprinkle some pepper, stir-fry twice and serve.
