DIY - Pork with Dried Plums and Vegetables
Overview
When I came to Guangdong, I often ate what the locals made - steamed braised pork with pickled vegetables, so I tried to steal it. Although I didn't do the whole process, I kept it in mind and made it myself - braised pork with dried pickles and vegetables. I tried making it a few times, and it tasted good!

Steps
-
After washing the pork belly, put it in a pot with water, take it out and let it cool
-
Pour water into a pot, take it out and let it cool
-
Prepare brown sugar
-
The dried pickles bought in the market are very fragrant. I only use them as side dishes, so I didn’t prepare much
-
Cut the pork belly into thin slices, but everyone needs to see clearly! I didn’t cut off the meat skin, so that I can fry the meat skin until crispy. In this way, the texture of the meat skin will be very soft and fragrant
-
When putting it in the pot, I divided the large piece of pork belly into three small pieces and let them dance happily in the hot pot
-
Look, the fried pork skin is so tempting.
-
Turn it over and fry it too
-
After frying, pick it up and drain the oil, and prepare to separate them! Some people's method is to steam the whole piece or cut it into thin slices and fry it in oil. It depends on personal preference
-
Cut them into pieces
-
Continue to fry the oil in the pan, otherwise it will be too fatty
-
Fry for a while, add a little salt (because the pickles themselves are salty), and a little light soy sauce for color
-
Later, move the meat around the pot, leaving an open space in the middle to fry the sugar color
-
The fried sugar-colored meat looks beautiful, right?
-
After the sugar color is fried, turn off the heat immediately, otherwise the pot will be easily burnt. Then put it on the plate. Place the skin side of the meat underneath and arrange it neatly
-
Then pour the dried pickles into the pot where the meat has been scooped up, and stir-fry until fragrant (if there is a lot of oil, you can scoop some up and save it for stir-frying the vegetables)
-
The fried dried pickles are so fragrant
-
Spread the fried pickles evenly on top of the meat
-
It’s ready to be steamed
-
The electric pressure cooker I used chose thirty minutes
