Braised noodles with eggplant, minced meat and tomatoes

My husband loves noodles the most, so let’s make a simple braised noodles! Sweet, sour, spicy and salty, it’s really delicious!

Cut the chicken breast into mince, season with salt and pepper and marinate for a few minutes. You can also dice the meat.

Cut the eggplant into small cubes.

Dice the tomatoes and mince the garlic.

After the oil in the pan is warm, fry the minced chicken until cooked.

Add diced tomatoes and stir-fry until soft.

Add diced eggplant and stir-fry until soft.

Add salt, soy sauce, and a little sugar to taste.

Add enough water to simmer until the ingredients are covered with water.

If the soup is low, add chili oil, pepper, chicken essence to taste, and add water starch to thicken it.

While making the brine, boil water in a pot. When the water boils, add the noodles.

Cook until about 6 minutes done, turn off the heat, take out and let cool.

Pour the marinade over the noodles, mix well and enjoy!
