Overview
Youpo noodles, also known as pulled noodles, pulled noodles, stretched noodles, Zhentiao noodles, and fragrant stick noodles, originated in the Ming Dynasty and are one of the traditional specialties of Shaanxi noodles.

Wash the rapeseed and soybean sprouts.

Finely mince onion, ginger and garlic.

Pour an appropriate amount of light soy sauce and vinegar into the bowl (can be 2:1), add salt and chicken essence, stir evenly, and make a sauce.

Blanch rapeseed and bean sprouts until raw.

The noodles are cooked and poured into cold boiled water.

Put the noodles into a bowl, top with rapeseed and bean sprouts, then add onion, ginger, garlic, and chili powder, and pour in the prepared sauce.

Heat the cooking oil in the pot and pour it evenly into the bowl.
