After all the ingredients are prepared, heat up the pan and put a little oil in it. Because fat pork also has oil, put the fat pork into the pan and fry it until it is deep golden brown. This way, the fat meat is not greasy at all and is very fragrant

After the fat meat is fried, add onions, ginger, and chili peppers. When the aroma is released, add dark soy sauce, eggplant, light soy sauce, sugar, and salt and stir-fry

Stir well, add water (just to the edge of the eggplant), cover the pot and simmer for about 5 minutes to soften the eggplant. Add a spoonful of chicken essence, reduce the sauce to half a bowl with a spoonful of cornstarch, pour it into the pot, and wait for the juice to drain. Don't make the sauce too dry, otherwise it won't taste good.
