Prepare the required ingredients. Clean the internal organs of a hairtail fish, wash and cut into sections.

The fishy smell needs to be removed before steaming the hairtail, so it is essential to add scallions and ginger slices. A handful of Sichuan peppercorns can also effectively remove the fishy smell. Pour in another tablespoon of cooking wine. Add a small spoonful of salt and marinate for about 2 hours.

Wash and cut the bitter melon into sections. If you want to preserve the green color after blanching, add 1 teaspoon of salt and half a teaspoon of cooking oil to boiling water, blanch for half a minute, drain in cold water and set aside.
