Overview
This is a simple version of hot and sour soup. You can add your favorite mushrooms or shredded tofu.

Peel and dice tomatoes, shred crab mushrooms, and chop green onions and coriander.

Pour a little oil into the pot, add diced tomatoes and stir-fry a few times.

Add water and bring to boil.

Add crab mushrooms

Prepare appropriate amount of cornstarch, add water and stir evenly.

While pouring the cornstarch water, stir the pot with chopsticks until the soup becomes thicker. Continue to boil. Add a little salt, chicken essence, mature vinegar, and fresh chili powder to adjust to suit your taste.

Sprinkle with green onions and cilantro before serving.
