Stir-fried minced pork with pickled vegetables and edamame
Overview
During this season, this dish is a regular on my table. Edamame is a fresh legume vegetable that is rich in plant protein, a variety of beneficial minerals, vitamins and dietary fiber. The protein is not only high in content, but also of high quality, comparable to the protein in meat and eggs, and easy to be absorbed and utilized by the body. Moreover, edamame is rich in potassium, which can relieve fatigue and loss of appetite caused by hot weather, and is especially suitable for consumption in summer.
