Cured rice with fried rice
Overview
Oily rice is a recipe from my husband’s hometown, and is eaten on New Year’s Day and festive occasions. You can cook it with glutinous rice, white rice or a mixture of glutinous and white rice. This time I cooked white rice and glutinous rice together.

Caiguo is the name of Kaiping in Taishan, Guangdong, and it is actually kohlrabi.

Peel and dice vegetables and fruits.

Soak mushrooms.

Cut mushrooms, sausages, and bacon into cubes respectively. (For how to make sausages and bacon, please see my recipes Cantonese-style sausages and Cantonese-style bacon.)

Rinse green pea kernels.

Chop green onions.

Wash the rice and start cooking.

After the rice is ready, mix it until loose and set aside.

Heat the oil in a pan and fry the mushrooms, sausages and bacon until fragrant.

Add diced vegetables and green beans and stir-fry evenly.

Add oyster sauce, sugar and a little water and stir-fry until the vegetables and fruits are cooked and the water dries up.

Add chopped green onions and stir-fry evenly.

Add the fried ingredients into the rice and mix well.

Add 2 tablespoons of light soy sauce and continue mixing. (Adjust the seasoning according to your own taste.)

The fragrant fried rice can be eaten in two large bowls without any vegetables.
