It was raining continuously during the Double Festival. I don’t like to go out to join in the fun. I only sleep and play with noodles. No! A pot of lotus leaf cake is ready tonight!

Pour the flour into the basin;

Pour warm water into a cup, add yeast and sugar, mix well and let it sit for a few minutes;

Pour the yeast water into the flour and use chopsticks to mix into a flocculent form;

Knead the dough with your hands;

Cover with plastic wrap and ferment until no more than three times in size;

Take out the dough and divide it into eight equal parts, roll each into a round ball;

Take a small piece of dough and roll it into an oval;

Use a brush to apply a thin layer of oil;

Fold together;

After folding, use a fine-tooth comb to press a few marks;

Pinch it with your hands below;

Complete each one in turn;

Pour cold water into the steamer, put in the shaped dough, and let it rise again for less than 20 minutes;

Steam over medium heat for 15 minutes, then turn off the heat and simmer for three minutes before serving;
