Brown sugar enzyme dried fruit bread
Overview
I made a few bottles of brown sugar version of enzyme, made with 10 kinds of fruits. After the fermentation is complete, it tastes very good. It is said that the nutritional value of enzyme is very high. Because the brown sugar and enzyme used are very dark in color, they can be used to create a light coffee color in the finished product, so I used it to replace sugar and part of the liquid and made this bread with dried nuts. Enzymes replace sugar, and healthy walnut oil is used as fat. This bread does not require any burden to eat, and it is a delicious and healthy bread. Because of the addition of enzymes, the surface of the baked bread is very dark and looks like it is burnt, but in fact it is not burnt, and the bread is also very soft. I told my little baby that he really liked this bread. I made it for him as a snack in the morning and he ate half of it in a while.

Steps
-
The enzyme I made earlier, the darker one is made from brown sugar and fruit, so I used it to create the color
-
Prepare the required amount of enzyme and milk
-
Pour the enzyme, milk and salt into the bread bucket
-
Add high-gluten flour and yeast powder
-
I first used chopsticks to stir until there was almost no dry powder, and then added walnut oil. This can also be regarded as the post-oiling method. The post-oiling method uses the dough to stretch
-
Fry the walnuts in advance. I baked them with salt. Wash the black currants and dry the surface moisture
-
Knead the dough to the expansion stage
-
You can pull out the film and the edges of the holes are rounded. In fact, you can make this bread at this level without the need for gloves and film
-
I continued kneading for a few minutes, and I was able to pull out a thin and flexible film
-
Pour in the dried fruits, keeping the walnut kernels small. I pressed it slightly with a rolling pin
-
Knead evenly
-
Cover with wet drawer cloth and ferment until 2-3 times in size
-
Deflate the fermented dough and divide it into 3 parts. After 10 minutes, shape and place on the baking sheet
-
Moisturize and keep warm in the oven for 38 minutes to ferment until doubled in size. Sprinkle dry flour on the surface and cut into crosses
-
Preheat the oven to 180 degrees with upper and lower heat, then bake in the oven for 18 minutes
-
The baked bread, although very dark in color, is crispy on the outside and soft on the inside
-
Sliced cocoa, a lot of dried fruits, rich texture, a delicious and healthy bread
