Wash the pork belly and cut into small pieces. When I buy meat, I ask the store to cut it.

Put in cold water and blanch the pork belly

Rinse the blanched pork belly in cold water to remove the foam

Add a small amount of oil to the pot, and turn the pot so that the oil is all around the pot.

Add pork belly and stir-fry. This step is very important. Stir-fry over medium heat. You need to fry the fat in the pork belly so that the pork belly will not be greasy.

After the pork belly is fried in oil, take the meat out. Do not put oil in the pot, just put the white sugar and stir-fry the sugar color.

After mashing, add the pork belly and continue to stir-fry to color the meat

After the meat is colored, add water, green onion, ginger and rock sugar. Wrap all the seasonings in gauze and stew in the pot.

When the soup in the pot is almost simmered, use high heat to reduce the juice. Remember to use a shovel to stir-fry continuously when collecting the juice to prevent the pot from burning.

After the juice is collected, take it out of the pan and start eating.
