Wash the kelp; *I bought a kelp knot, untie it, wash it and then tie it again (because the feeling of biting sand is really bad), you can also cut it into small pieces

Cut the tofu into small pieces and boil it in boiling water first; *This can remove the beany smell

Heat oil in a pot, sauté ginger slices and scallions until fragrant, add dried shrimps and stir-fry until fragrant;

Pour in kelp and tofu, add salt, and shake the pot a few times;

Add appropriate amount of water (or stock) and cover the pot;

Bring to a boil over high heat, then reduce to medium to low heat and simmer until the kelp tofu is fragrant, about 15 minutes. Finally, season with chicken essence and that’s it!
