Open the belly of the hairtail fish and remove the internal organs. Use a knife to scrape off the scales on the outside. Cut into pieces and put them in a basin. Add cooking wine to remove the fishy smell, add salt, shredded green onions and sliced ginger.

Mix well and marinate for 2 hours.
