Wash the short ribs, blanch them in hot water and take them out. Add a little oil, garlic, ginger and Sichuan peppercorns to the pot and stir-fry until fragrant. Add the blanched short ribs and stir-fry over medium high heat

Stir-fry until the meat is slightly browned, add light soy sauce and continue to stir-fry

Fry until the short ribs are a little tight and more oil appears in the pan (the oil from the ribs) and the ribs are obviously browned

Add salt, add a small bowl of boiling water (do not exceed the ribs), bring to a boil over high heat, then turn down the heat and cover and simmer for 5-10 minutes

Open the lid and cook over high heat to reduce the juice. After the juice is reduced, stir-fry a few times until the soup turns into oil
