Add cooking wine and minced ginger to the pork stuffing, mix well and marinate

Dice tofu (you can also add potatoes, etc.)

Fry the meat filling, stir out the water and oil, tilt the pot slightly to drain the oil, and scoop out the meat

Wash the pot and put a little oil in it. When the oil is hot, put in two star anise and fry until fragrant. (You can turn off the heat in the middle to avoid burning it.) Remove the star anise

Add sweet noodle sauce and dry yellow sauce 1:1 into the oil that has been stir-fried with star anise, and slide it open

Add minced onions, minced ginger, and meat fillings in turn, stir-fry, add warm water, tofu, carrots, and cooking wine

Simmer over low heat for ten minutes, open the lid, add sugar and salt to taste. I like to make it taste like Peking duck, so I mainly adjust the sugar and very little salt

Make a thin layer of gravy and adjust to your preferred thickness

Drain the cooked noodles slightly and put them directly into the sauce pot and mix (for convenience, you can also put them into a bowl and mix quietly)
