Cut the ribs into cubes.

Rinse repeatedly with running water.

Put it into a container and soak it in water for 30 minutes, turning it several times to soak up the bleeding water, and then rinse it clean.

Slice ginger.

Put an appropriate amount of water into the pot, add ginger slices and cooking wine, add the spareribs and cook for 3 to 5 minutes with the lid off, stirring halfway through.

Then rinse the foam on the surface of the ribs with clean water.

Rinse the pot, replace the water, add the ribs again and bring to a boil over high heat, then simmer over medium-low heat for 1 hour.

Remove the ribs and drain the water.

Peel the oranges and remove the white stems.

Use a food processor to make orange juice and filter it several times.

Add a spoonful of sugar, mix well and let it sit for 10 minutes.

Add 2 tablespoons of olive oil to the pot and heat until slightly hot.
