  1. Remove the tips from the chicken feet, clean them and soak them for a while

  2. Add cooking wine to cold water and blanch chicken feet

  3. Remove and rinse with clean water

  4. Brine is my old soup for making braised food. For the ingredients, please refer to my "Braised Food" recipe

  5. Add water, cooking wine, salt, dark soy sauce, star anise, peppercorns, cinnamon, bay leaves, and ginger to the brine. Bring to a boil over high heat and cook over low heat for 30 minutes to get the flavor of the seasonings fragrant. Then add chicken feet, middle wings, green onions, and stewing for 15 minutes. Turn off the heat and open the lid. Do not soak for too long

  6. Take it out and cook it for about 22 minutes. The skin is a bit broken and it doesn’t look very nice

  7. Put it on a plate and eat it after cooling for a better taste. Children like to eat the wings with a pound of them in them
